Laurie's Spinach Salad
- 1/2 pound spinach bag or bunch, fresh, washed
- 1 large oranges peeled
- 1/4 cup almonds slivered, toasted
- 1/4 cup olive oil extra virgin
- 1 package sugar substitute
- 2 tablespoons vinegar
- 2 tablespoons oranges juice
- 2 tablespoons parsley leaves fresh, chopped, optional
- 1 x salt dash
- 1 x black pepper to taste
- Wash spinach and tear into mid-size pieces.
- Spin dry in salad spinner and set aside.
- Toast almonds under broiler until lightly browned.
- Peel orange and chop into bite size pieces.
- Combine dressing ingredients and shake well.
- Add almonds, oranges, and dressing to spinach and toss well.
