Sesame Noodles with Chicken
- 12 ounces, weight Japanese Noodles Or Spaghetti
- 8 ounces, weight Cooked Chicken Shredded
- 8 ounces, weight Water Chestnuts, Chopped
- 1/2 cups Thin Carrot Sticks
- 1/4 cups Sliced Almonds
- 6 whole Green Onions, Sliced Including Tops
- 1/2 cups Soy Sauce
- 4 Tablespoons Sesame Oil
- 3 Tablespoons Rice Vinegar Or Rice Wine Vinegar
- 3 Tablespoons Canola Oil
- 2 Tablespoons Peanut Sauce
- 1- 1/2 Tablespoon Sugar
- 6 cloves Garlic, Minced
- 2 teaspoons Ginger
- 1/2 teaspoons Hot Chili Oil Or Sauce (optional)
- Cook noodles as instructed on package, drain.
- While noodles are cooking, combine soy sauce, rice vinegar, sesame oil, canola oil, peanut sauce, sugar, garlic, ginger, and hot chili oil and whisk together until thoroughly combined.
- In a large bowl, pour sauce over noodles and stir gently until thoroughly combined.
- Add remaining ingredients and combine gently.
- Enjoy warm or cold.
- Notes:
- You can cook the chicken yourself or use canned.
- I prefer to use John Soules fully cooked chicken fajita meat.
- Just heat in the microwave until warm.
- I also use packaged carrot matchsticks to reduce prep time.
