Deli Salad Recipe
- 1/2 pound rainbow rotini, cooked and liquid removed
- 1 sm. jar marinated artichoke hearts
- 2 1/2 ounce. sliced pepperoni
- 1 c. sliced fresh cauliflowerets (can substitute mushrooms)
- 1 c. sm. fresh broccoli flowerets
- 1 c. diced Mozzarella cheese
- 1/2 c. sliced green onions
- 1/4 c. extra virgin olive oil
- 2 tbsp. red wine vinegar
- 1/2 teaspoon Italian seasoning (can substitute Salad Seasoning by Schilling)
- Combine all ingredients and cover and refrigeratethoroughly.
- Toss gently before serving.
- 6-8 servings.
