cheesy creamy potatoes
- 8 medium russet potatoes peeled and thinly sliced
- 1 large onion (I prefer purple or walla walla ) cut in half and then slice thinly
- 1 can cream of mushroom soup
- 1 packages velveta cheese cut into small cubes
- 1 cup milk
- 1 small tub of sour cream
- 1 salt to taste
- 2 cup shredded chedder cheese
- place potatoes and onion in a large bowl and cover with cold water mix together potatoes and onion and add salt and set aside
- in a metal mixing bowl add all other ingredients except shredded cheddar cheese, and place over a pot of boilin water to melt together
- drain water from potatoes and lay out in a deep 9x11" baking dish, spread the melted mixture on and carefully mix it together.
- cover with foil and bake at 350' for about 1 1/2 hrs then remove foil and add shredded cheese and cooked uncovered until it begins to get golden brown
