Thai Beef Curry (2)

  1. In a large pan bring the coconut milk to the boil, add the meat and all of the other ingredients EXCEPT THE SPINACH.
  2. Simmer till the meat is tender.
  3. Cook the spinach.
  4. Serve the meat and gravy on top of the spinach.
  5. Serve with boiled rice.
