Creole Chicken/Crockpot
- 1 each chicken, whole cut up, fryer
- 1 each green bell peppers chopped
- 6 each scallions, spring or green onions chopped
- 16 ounces tomatoes, canned undrained
- 6 ounces tomato paste one can
- 1/4 pound ham cubed
- 1 teaspoon salt
- 1 x red hot pepper sauce to taste
- 1/2 pound smoked sausage sliced
- 3 cups rice cooked
- In the crockpot, combine the chicken, pepper, onions, tomatoes, tomato paste, ham, salt, and pepper sauce.
- Cover and cook on low for 6 hours.
- Turn control to high and add sausage and cooked rice.
- Cover and cook on high for 15 to 20 minutes.
