Wild Rice Stuffing
- 2 packages uncle ben's long grain and wild rice blend (original recipe 6 oz. box)
- 1 cup butter
- 2 cups chopped onions
- 2 cups diced celery
- 1 cup shredded carrot
- 12 teaspoon pepper
- 2 quarts toasted bread cubes (regular white bread, toasted then cut into 1 inch cubes)
- 1 cup turkey broth, store-bought chicken broth can also be used (from cooking the giblets)
- Prepare rice according to pkg.
- directions.
- Melt butter in large skillet.
- Add onion, celery, and carrots and simmer until vegetables are tender.
- Mix the rice into the onion mixture.
- Add the pepper.
- Stir well and then combine with the bread cubes, lightly.
- Moisten with the turkey broth to desired consistency.
- Makes enough to stuff a 20 -25 lb.
