Curry Beef Casserole

  1. Heat half the oil in a large frying pan over high heat.
  2. Cook beef until browned, remove.
  3. Heat remaining oil and saute onion.
  4. Stir in the flour and curry powder and cook a further minute.
  5. Add the combined red wine, water, Vegemite*, sugar and ginger to the pan along with the beef.
  6. Pour contents of pan into a 2.5L capactiy casserole dish, cover and bake at 160C for 45 minutes.
  7. Add capsicum and cook for a further 30 minutes or until beef is tender.
  8. Stir in parsely, then serve with rice.
