Lemon-Blueberry Mousse Cups

  1. Add boiling water to gelatin mix in large bowl; stir 2 min.
  2. until completely dissolved.
  3. Add ice and lemon zest; stir until ice is completely melted.
  4. Reserve 1/4 cup COOL WHIP and 2 Tbsp.
  5. blueberries for garnish.
  6. Add remaining COOL WHIP and blueberries to gelatin; stir until blended.
  7. Spoon into 6 small dessert dishes.
  8. Refrigerate 2 hours or until firm.
  9. Garnish with reserved COOL WHIP and blueberries just before serving.
