Chicken Jambalaya
- 1 tablespoon oil
- 1 Mexican chorizo sausage, sliced
- 500g skinless chicken breast fillets, cut into 3cm cubes
- 1 onion, roughly chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, crushed
- 2 stalks celery, sliced
- 1 green capsicum, roughly chopped
- 1/2 teaspoon cayenne pepper
- 1 1/4 cups long-grain white rice
- 2 cups chicken stock
- 400g can diced tomatoes King Sooper's 1 lb For $0.99 thru 02/09
- 1/3 cup JL KRAFT Capsicum & Chilli Deli Spread
- 2 tablespoons chopped flat-leaf parsley
- Heat half the oil in a large frying pan over high heat and brown chorizo and chicken; remove.
- Heat remaining oil in pan, add onion, garlic, capsicum, celery and cayenne pepper and saute 3 minutes.
- Stir in rice, stock, tomatoes, Deli Spread, chicken and chorizo.
- Bring to boil then simmer, covered, for 15 minutes or until liquid is absorbed and rice is tender.
- Stir in parsley and serve immediately.
