Chicken Jambalaya

  1. Heat half the oil in a large frying pan over high heat and brown chorizo and chicken; remove.
  2. Heat remaining oil in pan, add onion, garlic, capsicum, celery and cayenne pepper and saute 3 minutes.
  3. Stir in rice, stock, tomatoes, Deli Spread, chicken and chorizo.
  4. Bring to boil then simmer, covered, for 15 minutes or until liquid is absorbed and rice is tender.
  5. Stir in parsley and serve immediately.
