Nif's Garlic and Bread Crumb Spaghetti

  1. In large pot of boiling salted water, cook spaghetti until al dente.
  2. Reserve 1/2 cup of the cooking liquid.
  3. Drain pasta and return to pot.
  4. Meanwhile in a frying pan, heat olive oil over medium heat.
  5. Fry crumbs and garlic until garlic is golden (not brown!
  6. ), about 4 minutes.
  7. Stir in fresh parsley and lemon juice.
  8. Add breadcrumb mixture to drained pasta along with reserved cooking liquid; heat through.
  9. Season with salt and pepper and sprinkle with Parmesan cheese.
