Linguine With Tuna Lemon and Arugula
- 14 cup olive oil
- 14 cup chopped onion
- 14 cup chopped green pepper
- 1 garlic clove, crushed
- 1 (6 ounce) can tuna, drained
- 3 tablespoons fresh lemon juice
- 12 ounces linguine
- 1 cup arugula
- Heat oil in a medium skillet; add onion and green pepper; saute 5 minutes.
- Add garlic, saute 1 minute.
- Stir in tuna and lemon juice.
- Meanwhile, cook the linguine in plenty of boiling salted water, about 12 minutes.
- Drain.
- Toss with tuna sauce and arugula.
- Serve.
