Potato Salad with Greek-Style Yogurt

  1. Make some Greek-style yogurt and leave it to drain overnight.
  2. To do this, simply wrap some plain yogurt in a clean cloth, tie the top and keep it in a bowl.
  3. Cut the vegetables into bite-sized pieces.
  4. Shred the carrot with a peeler.
  5. Sprinkle some salt into boiling water and boil the potatoes.
  6. Once soft, mash the potatoes up with a masher.
  7. Mix the ingredients from Step 2 and the mashed potato together.
  8. Then add in the Greek yogurt.
  9. Mix everything together and season with salt, pepper and lemon juice.
  10. Serve the salad in a bowl.
