Olive and Tomato Bruschetta

  1. Preheat broiler.
  2. Spray both sides of each bread slice lightly with cooking spray; place in single layer on rack of broiler pan.
  3. Broil 2 min.
  4. on each side or until lightly toasted on both sides.
  5. Mix tomatoes, olives, artichokes, cheese, dressing and parsley flakes.
  6. Spoon heaping tablespoonful of the tomato mixture onto each toast slice.
