Stir Fried Pea Shoots, Shredded Dried Squid and Scrambled Egg
- 1 bag Pea shoots
- 30 grams Saki-ika (cooked and shredded dried squid)
- 1 clove Garlic
- 1 Egg
- 1 tsp Mayonnaise
- 1 tsp Oyster sauce
- 1 Salt and pepper (to taste)
- Cut the roots off the pea shoots and cut into half.
- Shred the saki-ika into bite sized pieces.
- Julienne the garlic.
- Heat oil in frying pan and stir fry the garlic and saki-ika.
- Add the pea shoots and stir fry.
- Move the pea shoots to the side, add the egg and mayonnaise to the empty part of the frying pan, and mix together.
- Mix the pea shoots and scrambled egg together.
- Add oyster sauce to finish, turn off the heat, and adjust the seasoning with salt and pepper.
- Transfer to serving plates and it's done.
