Caribbean Fish Burger (Perricone)
- 18 ounces raw salmon, chopped
- 12 cup red onion, minced
- 1 egg white
- 2 tablespoons fresh ginger, minced
- 1 12 teaspoons fresh garlic, minced
- 1 teaspoon ground coriander
- 34 teaspoon ground cumin
- 14 cup fresh cilantro leaves, chopped
- 1 tablespoon fresh lime juice
- 1 tablespoon lime peel, grated
- 1 tablespoon olive oil
- 3 -4 whole grain buns (optional)
- 1 12 cups baby greens
- 1 lime, cut into wedges
- combine salmon, egg, and spices.
- Form into patties.
- Saute in olive oil until golden brown.
- Approx 6-7 minute.
- Arrange greens, place burgers on greens, garnish with lime wedges.
