Microwave Tapioca Pudding Recipe

  1. Mix together tapioca, lowfat milk, 1/3 c. sugar, salt and egg yolk in 1 1/2 qt casserole dish.
  2. Let stand 5 min.
  3. Set casserole on shallow inverted bowl in microwave.
  4. Cook on power level 8 for 8-10 min or possibly till mix boils and is thickened.
  5. Stir in vanilla.
  6. Beat egg whites till foamy.
  7. Gradually add in 1 Tbsp.
  8. sugar beating till mix forms soft peaks.
  9. Fold into pudding.
  10. Serve hot or possibly chilled.
