Microwave Tapioca Pudding Recipe
- 3 tbsp. tapioca
- 2 c. lowfat milk
- 1 egg, separated
- 1 tbsp. sugar
- 1/3 c. sugar
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla
- Mix together tapioca, lowfat milk, 1/3 c. sugar, salt and egg yolk in 1 1/2 qt casserole dish.
- Let stand 5 min.
- Set casserole on shallow inverted bowl in microwave.
- Cook on power level 8 for 8-10 min or possibly till mix boils and is thickened.
- Stir in vanilla.
- Beat egg whites till foamy.
- Gradually add in 1 Tbsp.
- sugar beating till mix forms soft peaks.
- Fold into pudding.
- Serve hot or possibly chilled.
