Huevos Rancheros Recipe Cowboy Larry

• 1 16 oz jar Larry's Southwestern Ranchero Sauce
• Eight corn tortillas
• Eight eggs
• 1/2 to 3/4 cup shredded Monterrey Jack or cheddar cheese
• 2 tablespoons oil for frying the eggs in

1. Warm the ranchero sauce until it is hot on the stove on in the microwave.
2. Warm the corn tortillas on the stove or in the microwave and place two tortillas slightly overlapping on each plate.
3. Fry the eggs in the oil until over easy or however you like them.
4. Place two eggs on the tortillas on each plate, cover with ranchero sauce and sprinkle with cheese.
5. Serve right away.
