Amy's Pan-Fried Oyster Po'boys With Creole Mayo

  1. Mix together all the mayo ingredients and set aside.
  2. Mix together the cornmeal, flour, and seasonings in a shallow dish.
  3. Whisk together the milk and egg in a small bowl.
  4. Preheat just enough oil to fry the oysters and prepare a draining plate with paper towels.
  5. Dip the oysters in the egg mix then dredge in the cornmeal mix.
  6. Fry in the oil until golden brown and drain.
  7. Cut the bread in half length-wise.
  8. Spread the Creole Mayo on the top half (use how much ever you prefer).
  9. Layer the tomatoes and lettuce on the bottom.
  10. Place the oysters on top of the lettuce and top with the other half of the bread.
  11. Cut into 4 slices.
  12. Serve immediately.
