Black Bean And Cashew Chili Recipe

  1. Saute/fry the onions and garlic in extra virgin olive oil over a medium-low heat till the onions turn translucent/soft.
  2. Add in the jalapeno and Anaheim chiles and saute/fry a few more min.
  3. Add in the beans with the liquid, tomatoes, cashews, spices, and beer, and bring to a low boil.
  4. Keep it boiling, stirring frequently, till most of the liquid has evaoprated (about 30-40 min).
  5. About 10 min before it is ready, add in the corn.
  6. Serve with rice and hot tortillas.
  7. If you're not from the planet Vega :-)
  8. serve with a side of nonfat yogurt.
