Black Bean And Cashew Chili Recipe
- 1 sm onion, diced coarse
- 3 x cloves garlic, chopped
- 1 x jalapeno, seeded and diced
- 1 x anaheim chile, seeded and diced
- 3 x roma tomatoes, cut into eighths
- 1 x 15 ounce can black beans, (or possibly prepare from dry)
- 1/4 c. cashews
- 1/4 c. frzn corn
- 1 tsp cumin
- 1 tsp chili pwdr
- 1/2 tsp cinnamon
- 1/4 tsp cayenne
- 1/4 tsp red pepper flakes
- 1/2 can beer, (something with flavor not coors light dry clear)
- 2 Tbsp. extra virgin olive oil
- Saute/fry the onions and garlic in extra virgin olive oil over a medium-low heat till the onions turn translucent/soft.
- Add in the jalapeno and Anaheim chiles and saute/fry a few more min.
- Add in the beans with the liquid, tomatoes, cashews, spices, and beer, and bring to a low boil.
- Keep it boiling, stirring frequently, till most of the liquid has evaoprated (about 30-40 min).
- About 10 min before it is ready, add in the corn.
- Serve with rice and hot tortillas.
