Strawberry Cream Popcicles
- 1 lb fresh strawberrys, hulled and quartered
- 1/4 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 tsp fresh lemon juice
- 1/2 tsp vanilla extract
- Place strawberries in a food processor or blender.
- Sprinkle sugar, lemon and salt on top and let sit 10 minutes to soften strawberries.
- Then blend until smooth
- Add cream and vanilla and mix just until blended
- Fill Popcicle molds with mixture and freeze until frozen, at least 4 hours.
- Run hot water on bottom of molds to release after freezing
