Sauteed Spinach
- 1 pound fresh spinach
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red chili flakes
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Bring a large pot of water to a boil.
- Add spinach and stir for 30 seconds.
- Strain in a colander.
- Squeeze out excess water.
- Reserve spinach.
- In a saute pan over medium-high heat add olive oil.
- Add garlic and chili and cook for approximately 2 minutes, or until garlic just begins to brown.
- Add spinach and saute for 2 minutes.
- Add lemon juice, salt and pepper.
- Toss and serve immediately.
