Sauteed Spinach

  1. Bring a large pot of water to a boil.
  2. Add spinach and stir for 30 seconds.
  3. Strain in a colander.
  4. Squeeze out excess water.
  5. Reserve spinach.
  6. In a saute pan over medium-high heat add olive oil.
  7. Add garlic and chili and cook for approximately 2 minutes, or until garlic just begins to brown.
  8. Add spinach and saute for 2 minutes.
  9. Add lemon juice, salt and pepper.
  10. Toss and serve immediately.
