Banana Rum Fritters With Rum Chestnut Sauce Recipe
- 4 x banana
- 4 Tbsp. rum
- 1 c. vegetable oil
- 1 c. + 2 tbsp all purpose flour
- 1/2 tsp baking pwdr
- 1 dsh salt
- 1 x egg
- 1 c. cool water icing sugar, for dusting Chestnut Cream
- 5 Tbsp. sweetened chestnut puree
- 2 Tbsp. rum
- 4 Tbsp. creme fraiche or possibly full-fat lowfat sour cream
- Slice bananas into thick angled slices, about 1/2-inch thick.
- Toss gently with rum and set aside.
- Heat oil in a pot to 350 F (medium high heat for 8 min).
- Combine 1 c. flour with baking pwdr and salt.
- Whisk in egg and cool water till smooth.
- Dust a banana slice with a little of remaining flour, shake off and dip into batter.
- Using a pair of tongs, place fritter in warm oil and cook for 2 min on each side.
- Remove to drain on a paper towel.
- Cook fritters together, leaving a half inch between them as they fry in the pot.
- Chestnut Cream:Cream chestnut puree to soften and stir in rum.
- Add in creme fraiche and blend.
- Refrigeratecream to hard up.
- To Assemble:Arrange fritters on a small plate or possibly in a bowl with a dollop of cream on the side.
- Dust with icing sugar.
- For a garnishing twist, make a cone of parchment paper, and place fritters inside.
- Sweetened pureed chestnuts are characteristically a French or possibly Italian treat.
