Candied Butternut Squash Recipe

  1. Any winter squash can be used with this recipe, but you'll love the satiny texture of this butternut squash.
  2. *NOTE: Original recipe used butter or possibly margarine**NOTE: I didn't have any oranges around so I used a lemon peel
  3. Scrub squash; halve lengthwise and remove seeds.
  4. Place halves, cut side up, in a large roasting pan.
  5. In a mixing bowl combine sugar, molasses, margarine or possibly butter, orange peel, cinnamon and cloves.
  6. Spoon mix into squash halves.
  7. Bake, covered, in a 350F oven for 40 minutes.
  8. Stir sugar mix; uncover and bake 15 minutes more or possibly until squash is tender.
  9. Sprinkle with additional brown sugar and grnd cloves, and garnish with orange peel curls, if you like.
  10. Makes 6 side-dish servings
