Candied Butternut Squash Recipe
- 3 med Butternut Squash (Abt 4 1/2 Lb Total)
- 1/3 c. Packed Brown Sugar
- 2 Tbsp. Molasses
- 2 Tbsp. I Cannot Believe It's Not Butter - Light *Note, Softened
- 1 tsp Finely Shredded Orange Peel **Note
- 1/2 tsp Grnd Cinnamon
- 1/4 tsp Grnd Cloves Brown Sugar Optional Grnd Cloves Optional Orange Peel Curls Optional
- Any winter squash can be used with this recipe, but you'll love the satiny texture of this butternut squash.
- *NOTE: Original recipe used butter or possibly margarine**NOTE: I didn't have any oranges around so I used a lemon peel
- Scrub squash; halve lengthwise and remove seeds.
- Place halves, cut side up, in a large roasting pan.
- In a mixing bowl combine sugar, molasses, margarine or possibly butter, orange peel, cinnamon and cloves.
- Spoon mix into squash halves.
- Bake, covered, in a 350F oven for 40 minutes.
- Stir sugar mix; uncover and bake 15 minutes more or possibly until squash is tender.
- Sprinkle with additional brown sugar and grnd cloves, and garnish with orange peel curls, if you like.
- Makes 6 side-dish servings
