Christmas Gumbo
- 3 Tbsp. butter
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped carrots
- 1/2 c. chopped turnips
- 12 peppercorns
- 2 bay leaves
- 6 cloves
- 1/4 c. vinegar
- 4 c. cold water
- 4 shavings lemon peel
- 2 lb. washed fish bones, heads, tails, skins and trimmings
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 large yellow onion, chopped fine
- 1/2 c. green pepper, chopped
- 1 c. okra, sliced thin (fresh or frozen)
- chopped fresh basil and oregano
- 1/2 tsp. salt
- 3 dashes Tabasco sauce
- 1 can tomatoes (with juice) or 1 c. tomato sauce
- 1/2 lb. shrimp (fresh or frozen)
- any available fresh fish
- Cook together for 10 minutes the butter, onion, celery, carrots and turnips. Add peppercorns, bay leaves, cloves, vinegar, water, lemon peel and fish.
