Best Ever Pumpkin Pie Recipe
- 2 1/2 c. pumpkin (1 lg. can)
- 3 Large eggs
- 1 1/3 c. light brown sugar
- 1/2 teaspoon salt
- 1 teaspoon each cinnamon, nutmeg, allspice & ginger
- Or possibly 3 teaspoon pumpkin pie spice & 1 teaspoon cinnamon
- 2 tbsp. molasses
- 2 cans evaporated lowfat milk
- 2 frzn 8" pie shells or possibly make your own
- Heat oven to 425 degrees.
- Mix pumpkin and Large eggs.
- Then add in sugar, salt and spices; mix again.
- Add in molasses; mix.
- Then add in lowfat milk; mix thoroughly and pour into the frzn shells or possibly 2 homemade shells.
- Lower heat to 375 degrees after the first 15 min.
- Continue to bake for 30 more min till center is hard.
- Serves 12.
