Roasted Fennel and Green Bean Relish

  1. Blanch green beans in boiling water for 1 minute, then shocked in a cold-water bath.
  2. Preheat the oven to 350 degrees F.
  3. Put the fennel and onions in a roasting pan.
  4. Add the olive oil, salt, and pepper and toss to coat evenly.
  5. Roast until soft and lightly browned, about 1 hour, tossing once or twice.
  6. Let cool.
  7. Combine the fennel mixture with the beans and toss to mix.
  8. Serve at room temperature.
