Applesauce Spice Cake With Caramel Frosting Recipe
- 1 c. Butter, (2 sticks) at room temperature
- 1 c. Sugar
- 2 x Large eggs
- 3 c. Flour, sifted
- 2 tsp Nutmeg
- 1 tsp Cinnamon
- 1 tsp Baking soda
- 1/2 tsp Grnd cloves
- 1/2 tsp Grnd allspice
- 1/2 tsp Ginger
- 1/4 tsp Salt
- 16 ounce Applesauce
- 1 c. Walnuts, coarsely minced
- 1 c. Golden brown raisins
- 3/4 c. Unsalted butter, (1 1/2 sticks)
- 1 1/2 c. Dark brown sugar
- 6 Tbsp. Evaporated lowfat milk
- 2 1/2 c. Sifted confectioners' sugar

- Prepare the cake: In a large bowl, beat butter and sugar with an electric mixed, till light and fluffy.
- Beat in Large eggs, one at a time.

- In another large bowl, sift together sifted flour, nutmeg, cinnamon, baking soda, cloves, allspice, ginger and salt.
- Slowly add in sifted dry ingredients to the butter mix alternately with the applesauce, Mix well.
- Stir in walnuts and raisins.

- Pour batter into a greased 9-by-13-inch baking pan.
- Bake in a preheated 350-degree oven till a toothpick inserted in the center of the cake comes out clean; about 1 hour and 15 min.

- Remove cake from pan and let cold on a wire rack.

- Make the frosting: In a heavy-bottomed, medium saucepan, bring butter and brown sugar to a boil over medium-high heat, stirring constantly, Boil, stirring, for two min.
- Remove from heat and stir in the lowfat milk.
- Let cold till just hot to the touch.

- Stir in confectioners' sugar c. at a time.
- Mix till smooth.
- Frost cake.
