Chipotle - Pineapple Black Beans
- 1 large can cooked black beans
- 1 can crushed pineapple
- 1 can San Marcos chipotle salsa
- 2 avocados; diced
- 1 bundle cilantro; chiffonade
- 1 bundle scallions; chopped
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1 vegetable oil; as needed
- 1 pinch salt and ground white pepper
- Heat vegetable oil in a large saute pan.
- Drain beans and rinse.
- Add to pan.
- Toss.
- Season.
- Add pineapple and chipotle.
- Saute on medium heat for 3 minutes.
- Add avocados, cilantro, and scallions.
- Toss.
- Heat for 30 seconds.
- Serve
