Chipotle - Pineapple Black Beans

  1. Heat vegetable oil in a large saute pan.
  2. Drain beans and rinse.
  3. Add to pan.
  4. Toss.
  5. Season.
  6. Add pineapple and chipotle.
  7. Saute on medium heat for 3 minutes.
  8. Add avocados, cilantro, and scallions.
  9. Toss.
  10. Heat for 30 seconds.
  11. Serve
