Buttermilk blueberry banana bread

  1. Preheat oven to 350F.
  2. Lightly coat four 5 3/4-inch mini loaf pans with nonstick spray.
  3. In a large bowl, combine flour, baking powder, baking soda and salt.
  4. In the bowl beat butter and sugar until light and fluffy.
  5. Beat in eggs, buttermilk and vanilla until well combined.
  6. Beat in bananas until well combined.
  7. Gradually add flour mixture to the mixture, beating just until incorporated.
  8. Add blueberries and gently toss to combine.
  9. Scoop the batter evenly into the loaf pans.
  10. Place into oven and bake for 30-35 minutes, or until a tester inserted in the center comes out clean.
  11. Let cool for 15 minutes
