Stuffed Pepper Soup

  1. Brown ground beef & onions in a large 5qt.
  2. pot.
  3. Drain off excess grease.
  4. Add rice, tomatoes, tomato sauce, spices, broth & water.
  5. Bring to a boil & reduce heat & cover 20 minutes if using precooked rice.
  6. If using uncooked rice, rice should be timed according to package directions for rice cooking times.
  7. Cooking times for rice varies.
  8. Add a bit more liquid (water or broth) if it isn't soupy enough.
  9. When rice is cooked add peppers & simmer for 20 minutes longer salt & pepper to taste.
  10. Serve hot with shredded cheddar cheese on top.
  11. Enjoy!
