Nepalese curried pork mince fried rice
- 800 grams Pork Mince
- 2 tbsp yellow mustard seeds
- 2 tsp ground cumin seed
- 1 tsp turmeric
- 2 tsp Garam Masala
- 1/4 cup chopped Coriander (optional)
- 1 cup Fresh or frozen, Pea/corn/Carrot mix
- 1 cup cooked rice
- 2 medium Fine chopped onions
- 2 fine chopped Fresh red chillies (optional)
- 20 grams Grated Fresh Ginger (Or a couple of tspn's of minced)
- 2 tbsp Peanut oil
- 1/2 cup Water
- Heat oil in wok(medium high), Add mustard seeds, cook until popped,about 2-3mins.
- Add Cumin/Turmeric/Garam Masala, and stir fry for 2mins
- Add Garlic/Ginger/Onions/Vegies.
- stirfry till soft
- Add mince, stir fry till browned and separated.
- Add water, Simmer uncovered 15 mins or till evaporated
- Add Cooked Rice, stir fry 2mins
- Remove from heat, Add Coriander and stir through
