Buttermilk Fantails

  1. Stir together water, yeast, sugar.
  2. Let sit 5 minutes (until foamy).
  3. Mix flour, salt, buttermilk, and 6 tsp melted butter into yeast mixture.
  4. Knead until elastic and smooth (6 to 8 minutes).
  5. Oil top and bottom of dough and place in a large bowl and cover with plastic wrap.
  6. Let rise until doubled (1.5 to 2 hours).
  7. Punch dough down and cut in half.
  8. Roll out 1/2 of dough to make a 12x12 square.
  9. Cut square into 6 equal strips.
  10. Butter the strips, then stack them on top of each other.
  11. Cut stack into 6 equal parts.
  12. Butter muffin pan and place rolls into muffin pan.
  13. Repeat steps 8 through 13 for other half of dough.
  14. Fan out tops of rolls.
  15. Cover with towel and let rise for 1 to 1.5 hours.
  16. Preheat oven to 375.
  17. Back rolls until golden, 20 to 25 minutes.
  18. Brush tops with melted butter before serving.
