Double Chocolate Doughnuts
- 1 egg
- 1/2 cup sugar
- 1 oz. unsweetened chocolate
- 1 tbsp. butter
- 1/2 cup mashed potatoes
- 1-3/4 cup all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/3 cup milk
- 2 tbsp. butter
- 1 oz. unsweetened chocolate
- 2 tbsp. boiling water
- 1/4 tsp. vanilla
- Beat the egg until light.
- Beat in the sugar.
- Melt the chocolate and butter together.
- Add to the egg mixture.
- Stir in the mashed potatoes.
- Mix the flour, salt and baking powder together.
- Add the milk to the egg mixture, alternating with the flour mixture.
- Chill for 1 hour.
- Roll out on a lightly floured board to a 3/8-inch thickness.
- Cut using a floured doughnut cutter.
- Fry until crusty brown (about 2 minutes).
- Drain.
- Frosting: Melt butter and chocolate together.
- Beat in sugar, boiling water and vanilla.
- Mix thoroughly.
- Coat thed oughnuts with the frosting after they have cooled.
