Bhopali Roti

  1. Sift together whole wheat flour, rice flour and salt in bowl.
  2. Rub in 2 tbsp of ghee or oil.
  3. Add rest of ingredients except oil (for frying).
  4. Gently add water to make a soft dough.
  5. Knead well until no longer sticky.
  6. Shape dough into 8 small balls.
  7. On a floured surface, roll out each ball into a 6" (15 cm) round.
  8. Heat a griddle.
  9. Place the round dough in it and dry roast.
  10. When little brown speaks appear on the underside, turn the roti over.
  11. Smear a little ghee or oil over the surface and drizzle 1 teaspoon ghee or oil around the roti.
  12. Cook until both sides are golden brown.
  13. Repeat with the remaining dough.
