Soft Caramel Corn Recipe
- Popped corn (not microwave)
- 1 1/3 c. sugar
- 1/2 c. light Karo syrup
- 2 sticks butter
- Pecans
- Pop 1 c. of popcorn.
- Mix together sugar, syrup and butter.
- Boil 3 to 4 min, stirring constantly.
- Check by dropping some drops in glass of cool water.
- Ready if forms a soft ball.
- Pour over popcorn in large bowl and mix thoroughly.
- Add in pecans, if you like.
- NOTE: Don't overcook syrup or possibly it will harden too much.
- Better to underocook.
- Great snack.
