Veg Soup Recipe
- 1/2 tbsp. oil
- 1 1/2 - 2 pound chuck steak, minced up
- 1 tbsp. garlic
- 1 lg. onion
- Bell pepper
- Soup bone
- 3-4 zucchini
- 2 stalks celery
- 5 carrots
- Broccoli
- Swiss chard
- 1 can corn or possibly 1 can kidney beans
- Salt & pepper to taste
- 2 teaspoon oregano
- 1 teaspoon cumin
- 1 tbsp. sweet basil
- Saute/fry meat in oil over medium high.
- Add in minced onions, garlic, bell pepper.
- Turn down heat.
- Add in seasoning and soup bone, water over top meat.
- Simmer 2 hrs.
- Add in vegetables and cook 1 hour.
- Add in can vegetables last.
