The Best Mac N Cheese

  1. Preheat oven to 350F Make pasta and set aside.
  2. DO NOT OVERCOOK!
  3. In a 3 qt stew pot, melt the butter over med heat.
  4. Then add the flour and blend completely.
  5. Now add the seasonings and, stirring constantly, Brown the flour mixture, about 10-15 minutes.
  6. Lower the heat if the flour mixture starts to brown too fast.
  7. Now add the 1st cup milk.
  8. Be careful with that first cup (no, you didn't ruin it.
  9. The additional milk will pull it back together).
  10. Now add the rest of the milk along with the white wine and stir constantly until it starts to simmer and thicken - about 20-30 minutes.
  11. Now add 3 1/2 cups of cheese to sauce.
  12. Stir until completely blended.
  13. Add noodles and pour into a 3 qt casserole dish.
  14. Cover top with last 1/2 cup of cheese and put in oven for 30 minutes.
  15. Let sit 20 minutes before serving.
