Sparkling Apple Berry Mold

  1. Mix gelatin and sugar in small saucepan.
  2. Stir in apple juice; let stand 1 min.
  3. Cook on low heat 3 min.
  4. or until gelatin is completely dissolved.
  5. Cool slightly.
  6. Stir in cider.
  7. Refrigerate until mixture is consistency of unbeaten egg whites, stirring occasionally.
  8. Gently stir in fruit.
  9. Pour into 6-cup mold.
  10. Refrigerate at least 4 hours or until firm.
  11. Unmold onto serving plate.
  12. Store leftover mold in refrigerator.
