Barb's Special Rice Pudding Recipe
- 1 pound "Carolina" rice
- 1 stick butter
- 1 can evaporated lowfat milk
- 1 quart. lowfat milk
- 1 c. sugar or possibly add in more or possibly less to taste
- 1 lg. pkg. Jello instant pudding
- Vanilla to taste
- Raisins (optional)
- Boil rice in directed amount of water till almost tender.
- Can leave some water in.
- Turn to simmer.
- Then add in butter, can lowfat milk, lowfat milk, sugar and simmer 2 hrs.
- Remove from heat.
- Stir in dry pudding mix and vanilla.
- Add in raisins.
- Sprinkle with cinnamon.
