Veggie Latkes with Apple Yogurt

  1. For the latkes:
  2. Place cauliflower florets into a basket steamer above a pot of boiling water.
  3. Cover the pot and steam for about 10 minutes, or until soft.
  4. Remove from heat.
  5. Combine cauliflower with all of the other latke ingredients in a large bowl and mix to combine.
  6. Spoon 3/4 of the mixture into a food processor and puree until smooth (but not overly-pureed).
  7. Place puree back into the bowl and mix it into the remaining 1/4 of the ingredient combination.
  8. Heat a nonstick skillet over medium heat (spray the skillet with cooking spray if desired).
  9. Place 2 Tablespoons of the batter into pan (you may cook multiples at the same time, depending on the size of your pan) and press each scoop into a circle.
  10. Cook for 3-4 minutes on one side then flip and cook on other side until lightly brown and cake-like.
  11. Remove from pan and serve hot.
  12. You may place them on a baking sheet in an oven heated to 200 degrees F while the remaining latkes cook.
  13. For the apple yogurt: Mix all ingredients in a bowl and serve on top of the latkes!
