Curried Gnocchi with Golden Beets
- 1 Tablespoon Olive Oil
- 3 cloves Garlic, Minced
- 1 White Onion, Diced
- 1 Medium Golden Beet, Peeled And Cut Into Thin Slices (1 Should Yield About 2 Cups)
- 3 cups Swish Chard (remove White Parts)
- 2 cups Vegetable Stock
- 1 teaspoon Ground Coriander
- 1 teaspoon Curry Powder
- 1/2 teaspoons Cumin
- 1/2 teaspoons Ground Sea Salt
- 1 package (17 Oz. Size) Gnocchi
- Heat a large skillet over medium-high heat.
- Add olive oil to pan and swirl to coat.
- Add garlic and cook for 1 minute, being careful not to burn.
- Add onion and cook 1 minute, stirring as it cooks.
- Add beets and cook for 3 minutes.
- Add Swiss chard, vegetable stock, and all spices.
- Cover and reduce heat to medium.
- Simmer about 8-9 minutes or until beets are tender.
- Add gnocchi to mixture, cover and simmer for 3-4 minutes.
- Remove from heat and serve.
