Curried Gnocchi with Golden Beets

  1. Heat a large skillet over medium-high heat.
  2. Add olive oil to pan and swirl to coat.
  3. Add garlic and cook for 1 minute, being careful not to burn.
  4. Add onion and cook 1 minute, stirring as it cooks.
  5. Add beets and cook for 3 minutes.
  6. Add Swiss chard, vegetable stock, and all spices.
  7. Cover and reduce heat to medium.
  8. Simmer about 8-9 minutes or until beets are tender.
  9. Add gnocchi to mixture, cover and simmer for 3-4 minutes.
  10. Remove from heat and serve.
