Arroz Con Elote (Rice With Corn) Recipe
- Fry 1 c. rice in 1/3 c. peanut oil, until golden brown.
- Add in 1/3 c. medium onion, sliced and 2 cloves crushed garlic, stir and cook until soft.
- Drain excess oil, add in 3 c. chicken broth and 1 c. frzn corn, NOT CANNED, cover, and cook 20 min.
- Let sit 10 min, and fluff with a fork.
