White Chocolate Cookies
- 1 1/2 cups butter softened
- 1 cup sugar granulated
- 3/4 cup brown sugar, light packed
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/2 cups flour, all-purpose
- 23 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 package white chocolate chips
- 3/4 cup pecan halves coarsely chopped
- 1/2 cup golden raisins
- Preheat oven to 350F (180C).
- Lightly grease cookie sheets or line with parchment paper.
- Beat butter, sugars, vanilla and eggs in large bowl until light and fluffy.
- Combine flour, cocoa, baking soda and salt in medium bowl, blend into creamed mixture until smooth.
- Stir in white chocolate chips, pecans and raisins.
- Scoop out about 13 cup dough for each cookie.
- Place on prepared cookie sheets, about 4 inch apart.
- Flatten each cookie slightly.
- Bake 12 to 14 minutes or until firm in center.
- Cool 5 minutes on cookie sheets, remove to wire racks to cool completely.
