Banana Nut Bread
- 1/2 c. margarine (1 stick)
- 2 Tbsp. sugar
- 1/2 c. liquid egg
- liquid sugar substitute equal to 1/3 c. sugar
- 1 c. all-purpose flour
- 3/4 c. oat bran
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. mashed bananas (3 medium)
- 1/4 c. chopped nuts
- Cream together the margarine and sugar at medium speed until light and fluffy.
- Add egg substitute and sweetener to creamed mixture; beat at medium speed for 1 minute.
- Stir flour, oat bran, baking powder and soda to blend well.
- Add bananas to creamed mixture, along with flour mixture; beat for 1 minute at medium speed.
- Add nuts to batter; mix lightly.
- Spread evenly in greased loaf pan.
- Bake at 375u0b0 for 45 minutes.
- Cool in pan for 10 minutes.
- Cut into 14 equal slices, then serve.
