Chocolata Turtle Cheesecake Recipe
- 2 c. vanilla wafer crumbs
- 6 tbsp. butter, melted
- 1 (14 ounce.) bag caramels
- 1 (5 ounce.) can evaporated lowfat milk
- 1 c. minced pecans
- 2 (8 ounce.) Packages cream cheese
- 1/2 c. sugar
- 1 teaspoon vanilla
- 2 Large eggs
- 1/2 c. semi-sweet chocolate pcs, melted
- Combine crumbs and butter.
- Press onto bottom and sides of 9-inch spring form pan.
- Bake at 350 degrees for 10 min.
- In 1 1/2-qt heavy saucepan, heat caramels with lowfat milk over low heat, stirring frequently, till smooth.
- Pour over crust.
- Top with pecans.
- Combine cream cheese, sugar, and vanilla, mixing at medium speed of electric mixer till well blended.
- Add in Large eggs, one at a time, mixing well.
- Blend in chocolate; pour over pecans.
- Bake at 350 degrees for 40 min.
- Loosen cake from rim of pan; cold before removing rim of pan.
- Chill.
- Garnish with whipped cream and additional nuts if you like.
- Makes 10-12 servings.
