Chicken Cheese Cups
- 8 pieces Phyllo
- Melted Butter
- 2 whole Eggs
- 1/2 cups Heavy Cream
- 1/4 teaspoons Sea Salt
- 1 dash Pepper
- 1 cup Cooked And Diced Chicken
- 2 Tablespoons Finely Chopped Cilantro
- 1/2 cups Shredded Cheese
- 1.Preheat oven to 350
- 2.Brush 1 sheet of phyllo dough with melted butter
- 3.Cut into 8(2x2) squares
- 4.
- Line each muffin cup with square of phyllo
- 5.
- Repeat until each muffin cup has 4 squares
- 6.
- In a small bowl, whisk together eggs, cream, salt and pepper
- 7.
- In another bowl, toss together chicken, cilantro and cheese
- 8.
- Spoon 1 rounded teaspoon of chicken filling in each shell and then add about 1 teaspoon of egg mixture
- 9.
- Let sit for 1 minute and then add another teaspoon of egg mixture , filling it close to the top
- 10.
- Bake the cups until set, about 15 minutes
- 11.
- Let cool
