Chicken Cheese Cups

  1. 1.Preheat oven to 350
  2. 2.Brush 1 sheet of phyllo dough with melted butter
  3. 3.Cut into 8(2x2) squares
  4. 4.
  5. Line each muffin cup with square of phyllo
  6. 5.
  7. Repeat until each muffin cup has 4 squares
  8. 6.
  9. In a small bowl, whisk together eggs, cream, salt and pepper
  10. 7.
  11. In another bowl, toss together chicken, cilantro and cheese
  12. 8.
  13. Spoon 1 rounded teaspoon of chicken filling in each shell and then add about 1 teaspoon of egg mixture
  14. 9.
  15. Let sit for 1 minute and then add another teaspoon of egg mixture , filling it close to the top
  16. 10.
  17. Bake the cups until set, about 15 minutes
  18. 11.
  19. Let cool
