Honey Cure
- 4 cup cold water
- 3/4 cup honey
- 4 strips of lemon zest
- 1/2 cup coarse salt (sea or kosher)
- 10 whole cloves
- 10 peppercorns
- 2 bay leaves
- 10 allspice berries
- Combine all the ingredients in a bowl and whisk until the salt and honey are dissolved.
- Use immediately.
- *This cure was designed for fish, but can also be used for turkey, chicken, or pork.
- Cover and marinate small pieces of fish or pork for 1 to 2 hours, medium pieces of fish or pork for 2 to 3 hours, and large pieces of fish or pork overnight in the refrigerator.
- Chicken breasts or turkey breasts need 2 to 4 hours, and a whole bird needs to be marinated overnight.
