Greek-Style Salad with Roasted Beets, Apples & Fennel
- 1-1/2 qt. asparagus spears, trimmed, blanched and cut into 1-inch lengths
- 1 qt. roasted golden beets, medium dice
- 1 qt. Granny Smith apples, cut into matchlike sticks
- 1 qt. grape tomatoes, cut in half
- 1 qt. seedless cucumbers, medium dice
- 2 cups baby spinach leaves, chiffonade
- 2 cups fennel, thinly sliced
- 2 cups radicchio, chiffonade
- 2 cups toasted walnuts, chopped
- 1-1/2 cups KRAFT Greek Vinaigrette
- to taste salt and pepper
