Split Black Gram Fritters - Medu Vada.
- 1 cup Split Black Gram without outer cover
- 3 Whole Pepper Corns
- 1/2 tsp Baking Soda
- 1 Salt
- 1 tsp Split Black Gram without the outer cover
- 1 tbsp Rice (uncooked)
- Soak the Split Black Gram in water overnight.
- After 12 hours, dry roast the ingredients under the Dry Roast column above in a pan till the color turns to stark white.
- Drain the soaked Split Black Gram and blitz it along with the dry roasted ingredients, pepper corns, salt, and baking soda.
- It should be a fine thick paste.
- Add very little water if it's difficult to blitz.
- Heat oil in a vessel (to deep fry) and add small amounts of the dough paste in the vessel through a spoon.
- Take it out when the color turns to the picture above.
- You can have this with any sauce, but the authentic sauce for this is a Coconut Chutney.
