Split Black Gram Fritters - Medu Vada.

  1. Soak the Split Black Gram in water overnight.
  2. After 12 hours, dry roast the ingredients under the Dry Roast column above in a pan till the color turns to stark white.
  3. Drain the soaked Split Black Gram and blitz it along with the dry roasted ingredients, pepper corns, salt, and baking soda.
  4. It should be a fine thick paste.
  5. Add very little water if it's difficult to blitz.
  6. Heat oil in a vessel (to deep fry) and add small amounts of the dough paste in the vessel through a spoon.
  7. Take it out when the color turns to the picture above.
  8. You can have this with any sauce, but the authentic sauce for this is a Coconut Chutney.
